Baked Salmon Filets

Ingredients

2 pieces Wild Caught Salmon Filets (5 oz. each filet, skin off both sides)

1 tbsp Extra Virgin Olive Oil

7 ozs Diced Tomatoes (drained)

1 Shallot (chopped)

1 tbsp Lemon Juice

1/2 tsp Dried Oregano

1/2 tsp Dried Thyme

Sea Salt & Black Pepper (to taste)

Directions

  1. Preheat the oven to 400 degrees.

  2. Brush one side of the salmon with olive oil and season with salt and pepper.

  3. In a medium bowl, stir the tomatoes, shallots, 1 T olive oil, lemon juice, oregano, thyme, salt and pepper until mixed.

  4. Tear 2 large sheets of aluminum foil. Place each salmon filet, oiled side down, in the middle of the foil. Twist the ends of the foil to form a "pouch" around the salmon. Spoon tomato mixture over the salmon. Fold the sides of the foil over the fish and mixture, making sure to cover completely, sealing them into the pouch. Repeat with remaining filets and place on a baking sheet.

  5. Bake for about 25 minutes or until the salmon is cooked to your liking. Serve in foil....it's fun and very easy to clean up!
