Cauliflower Turkey Fried Rice for Busy Nights

Ingredients

1 cup Cooked Ground Turkey

3/4 cup Carrots (finely diced)

2 Green Onions (finely chopped, white & green parts)

1 tbsp Coconut Oil

1 package Cauliflower Rice (12 oz frozen bag)

1 tsp Ginger (Chopped)

1 tsp Garlic (Minced)

1/2 tsp Black Pepper

3 tbsps Coconut Aminos (more if you like)

1 Egg (beaten)

Directions

  1. Preheat a large skillet over medium heat. Add coconut oil.

  2. Add carrots and green onions and cook until soft, about 4-5 minutes.

  3. Add cauliflower rice, ginger, and garlic, stir well to combine. Make a hole in the center of the pan and pour the beaten egg in the center. Scramble the egg, cooking it, and then incorporating everything in the pan together.

  4. Add turkey, coconut aminos, and black pepper. Stir and cook for an additional 2-3 minutes. Add additional coconut aminos to taste.

NOtes

  • Vegetables. Add any other vegetables that you enjoy such as broccoli, chopped kale, chopped spinach
