Clean Dijon Chicken
Ingredients
2 tbsps Coconut Oil
1 lb Chicken Breast
1/4 cup Arrowroot Powder (starch)
1 tbsp Ghee
2 Garlic Cloves (minced)
3/4 cup Organic Chicken Broth (and Gluten Free)
1/2 cup Organic Coconut Milk (from the can)
2 tbsps Dijon Mustard (look for low sugar)
1 tbsp Fresh Sage Leaves (fresh is ideal but dried is ok)
Sea Salt & Black Pepper (to taste)
Directions
First wash and dry the chicken breasts. Season both sides with the sea salt and pepper.
Pour the arrowroot on a plate. Lightly dredge each chicken breast on both sides.
Heat a skillet over medium heat and add the coconut oil. Sear the chicken on both sides, until slightly crispy (about 4-5 minutes each side).
Remove the chicken from the skillet.
Reduce the heat to low and add the ghee and swirl it around so it coats the skillet.
Add garlic and gently fry about 30 seconds, be careful not to burn the garlic.
Pour in the broth, dijon, and coconut milk and whisk it all together until evenly combined.
Add the chicken back in to the sauce and bring the heat up to a light simmer.
Add the chopped sage and cover and cook until the chicken is completely cooked through, about 5-10 minutes more.
Notes
What is Ghee? Ghee is clarified butter with lower levels of lactose than butter. Ghee is made by cooking butter and removing the milk solids. It can be used in place of butter.
