Lemon Chicken
Ingredients
1 1/2 lbs Chicken Breast (boneless, organic)
1 1/2 cups Organic Chicken Broth (and Gluten Free)
1 piece Lemon (large one, 1/2 for topping and 1/2 for juicing)
1/2 cup Capers
2 cloves Garlic (finely chopped)
2 tbsps Extra Virgin Olive Oil
Fresh Chives (finely chopped)
Sea Salt & Black Pepper (to taste)
Directions
Heat 2 T olive oil in a large skillet over medium heat.
Place chicken breasts in the skillet and add broth, the juice of 1/2 a lemon, and garlic.
Top each chicken breast with a slice of lemon (as thick as you wish).
Cover pan and let cook for for 8-10 minutes.
Add capers to the pan.
Cover and let cook for an additional 5-8 minutes, depends upon the thickness of the chicken.
Once chicken is cooked through, remove from pan and top with capers and fresh chives. Season with salt and pepper to taste.
