Pizza Spaghetti Pie
Ingredients
1 Spaghetti Squash (large)
1 lb Grass Fed, Organic Ground Beef (Italian sausage works great too)
1/2 Yellow Onion (diced)
1 cup Pizza Sauce (gluten Free Or Make Your Own) (no sugar added sauce)
1 tsp Dried Basil
3 Egg (whisked)
Misc. Veggies For Pizza You Like (optional veggies or cheese you like with pizza)
Directions
Pre heat oven to 400 degrees.
Cut spaghetti squash in half length wise. Place cut side down on a baking sheet and bake for 20-25 minutes or until skin of the squash gives when you press on it. Once soft, set aside until cool enough to touch and remove threads. Place threads in a 8x8 baking dish.
Place a large pan over medium heat. Add ground beef or sausage and onion. Break up into chunks. Cook until pink no longer remains.
Add pizza sauce, dried basil and salt and pepper to the pan and mix well.
Add sausage mixture and mix well with the spaghetti squash threads and the sauce.
Then add whisked eggs to the baking dish and mix everything together until you can no longer see the eggs.
Place in the oven and bake for 50-60 minutes or until the top of the casserole forms a light crust that doesn't give when you press on it.
Let sit for 5 minutes before serving.
Notes
Portions. One 8x8 pan is perfect for 1 serving for 4 people if each gets a square plus a side dish. If you have someone who will eat 2 or more squares, make 2 8x8 pans. I have not tested this recipe in a 9x13. If you do try it, you may have to bake longer for it to set.
