Breakfast Sausage Hash

Ingredients

4 Organic, Omega 3 Eggs

1 package Organic Chicken Sausage (about 1 lb.)

2 Sweet Potato (medium, diced)

1 Yellow Onion (diced)

1 Bell Pepper (any Color) (optional, diced)

1 tsp Chili Powder

1/2 tsp Dried Oregano

1/2 tsp Garlic Powder

1 tbsp Extra Virgin Olive Oil

Sea Salt & Black Pepper (to taste)

1/2 cup Green Onions (scallions) (optional, for garnishing)

Directions

  1. Preheat the oven to 400 degrees.

  2. Dice the sweet potatoes and place in a bowl. Season with olive oil as well as the spices, chili powder, oregano, and garlic powder.

  3. Spread the sweet potatoes on a baking sheet in a single layer. Roast for 25-30 minutes. *See step 6, if you plan to cook the eggs in the oven keep the oven on at 400 degrees.

  4. Melt a cooking fat of your choice in a skillet over medium heat. Add onions and bell peppers (if adding) and cook for 3-5 minutes, until soft. **See step 6, if you plan to cook eggs in the oven you will need an oven proof skillet for this step.

  5. Add the sausage (casings removed) to the onions and peppers and cook until the meat is browned. Add the sweet potatoes and mix everything together.

  6. Cooking the eggs, a few options: 1) you can crack the 4 eggs on top of the skillet and place it in the oven at 400 degrees for 10-15 minutes. **Make sure the skillet is oven safe. 2) Cook the eggs on the stove in a separate skillet and serve over the top of the hash.

  7. Garnish with the green onions if using and enjoy!

Notes

Protein Options. Bacon is a great option as well as ground turkey or chicken.
