Chicken Curry Salad

Ingredients

1/2 cup Paleo Mayonnaise (see Notes for brands)

2 tsps Curry Powder

1/2 Lime (juiced)

1/4 tsp Sea Salt

2 cups Chicken Breast (pre-cooked, diced or shredded)

1/2 Apple (diced)

2 Celery Stalks (finely diced)

2 tbsps Red Onion (finely diced)

1/4 cup Cashews (raw Or Dry Roasted) (roughly chopped)

1 tbsp Fresh Cilantro (optional)

Directions

  1. In a medium bowl mix together the mayo, curry powder, lime juice, cilantro and sea salt.

  2. Next add the cooked chicken, diced apple, celery, and onions until well combined.

  3. Fold in the cashews.

  4. Serve in lettuce wraps, on a bed of greens, or by itself.

Notes

Mayonnaise. Look for a mayonnaise made with avocado oil like Primal Kitchen or Chosen Foods
