KMax Quinoa Meatloaf
Ingredients
1/4 cup Quinoa (uncooked)
1 lb Grass Fed Ground Beef (ground turkey would work too)
2 Garlic Cloves (minced)
1/2 can Diced Tomatoes (italian Or Fire Roasted)
1 cup Baby Spinach (chopped)
1 1/2 tbsps Coconut Aminos (or tamari)
1 Egg
Sea Salt & Black Pepper (to taste)
1 head Cauliflower
1 1/2 tsps Coconut Oil (melted)
Directions
Pre-heat oven to 350 degrees.
Pre-cook the quinoa. 1/4 cup uncooked quinoa would need about 3/4-1 cup water. Place both quinoa and water in sauce pan over high heat and bring to a boil. Once boiling, reduce heat and simmer covered for 12-15 minutes. Set aside. You can also make the quinoa in a rice cooker.
In a large mixing bowl you are simply going to combine the meat, garlic (you could saute it but truthfully I don't), quinoa, diced tomatoes, spinach, coconut aminos, egg, and salt and pepper. Mix well with a spatula until everything is well distributed.
Lightly grease a standard loaf pan (8 x 4.5) with coconut oil. Spoon the mixture evenly across the pan making sure to spread it out evenly.
Bake in the oven for 40-45 minutes, or until the level of doneness you prefer.
While the meatloaf is baking, lightly steam cauliflower for a side dish, seasoned with salt and pepper.
Notes
Make as muffins. Make into little meatloaf muffins. Make sure to line the muffin tin with with muffin cups. They may take less time to cook, plan 30-40 minutes.
Add spice. Add a diced jalapeno to the mixture. Add hot sauce when serving.
Kid friendly. Sprinkle parmesan cheese on half of the meatloaf.
