Crazy Good Meat Sauce

Ingredients

1 lb Ground Beef (Ground Turkey works great too)

4 ozs Pancetta (chopped)

1 cup Mushrooms (cremini are my fav!)

1 cup Baby Spinach

1 Green Bell Pepper (chopped)

1 Yellow Bell Pepper (chopped)

2 cans 14 Oz Tomato Sauce (organic)

1 Yellow Onion

3 Cloves Of Garlic

1 tsp Garlic Powder

1 tsp Cayenne Pepper (omit if don't like heat)

1/2 tsp Dried Oregano

1/2 tsp Dried Parsley

1/2 tsp Dried Thyme

1/4 tsp Red Pepper Flakes (omit if do not like heat)

1/2 tsp Fresh Basil Leaves (dried Is Fine Too) (finely chopped)

Sea Salt & Black Pepper (to taste)

1 tbsp Extra Virgin Olive Oil

Directions

  1. Heat up a large saucepan over medium heat, add oil and then add the garlic cloves, mushrooms, peppers, and onion along with a little salt and pepper.

  2. Move veggies around until onions become translucent.

  3. Add meat and pancetta to the saucepan and break up the meat.

  4. While the meat is cooking, get water boiling and cook brown rice spaghetti according to package directions. Serving size of the noodles is about 1/2 cup.

  5. Add the spices once the meat has begun to cook through.

  6. When the meat is about done cooking, pour in the cans of tomato sauce.

  7. Salt and pepper once more, reduce the heat to a simmer for 5-7 minutes, throw in the spinach toward the end of the simmer.

  8. When all the flavors are well mixed, add the chopped fresh basil, mix well, and serve!

  9. To Freeze: place all ingredients into a 1 gallon freezer bag, seal, lay flat to freeze. To Cook: place thawed ingredients in a slow cooker on low for 4-6 hours or cook on stovetop in a large skillet until meat is completely cooked through.

Notes

Serving suggestions. Try it over spaghetti squash, zucchini noodles, brown or white rice, scrambled eggs, roasted brussels sprouts, or even by itself.
