Family Friendly Paleo Sloppy Joe Skillet

Ingredients

1 tbsp Organic Coconut Oil

1 Small Sweet Potato (peeled, diced)

1 lb Grass Fed Ground Beef

1 Yellow Onion (diced)

3 tbps Green Onion

1 cup Canned Organic Tomato Sauce

2 tbsps Coconut Sugar

1 tbsp Coconut Aminos

2 tsps Apple Cider Vinegar

1 tsp Garlic Powder

1/2 tsp Sea Salt

Directions

  1. Sauce - Combine all the ingredients in a blender and blend until well combined: tomato sauce, 1/2 cup water, coconut sugar, coconut aminos, apple cider vinegar, garlic powder, sea salt

  2. Melt the coconut oil in a large skillet over medium heat. Saute the diced sweet potato for 10 mins. or until softened. Set aside.

  3. Add the chopped onion and ground beef to the skillet and stir to break up the beef. Stir until browned.

  4. Add the sweet potato back to the beef and onion mixture and combine with the sauce. Stir until well combined. Simmer for 10 mins.

  5. Remove the skillet from heat and add the green onion. Season further to taste and ENJOY!

Notes

Additions. Green or red peppers

Side Dish Options. Roasted broccoli or roasted brussels sprouts

Serving Options. You could serve it over zucchini noodles, quinoa, cauliflower rice, or white rice. You also could serve on a bun for kids.

To Freeze: Place all ingredients (minus the coconut oil) in a freezer bag, make sure to remove all of the air, seal, freeze flat.
