Lemon Energy Bites

Ingredients

1 1/2 cups Almond Flour

1/3 cup Coconut Flour (ideally organic)

0 tsp Sea Salt (1-2 pinches)

1/3 cup Maple Syrup (Pure, organic)

1/4 cup Freshly Squeezed Lemon Juice

1 tbsp Lemon Zest

2 tsps Vanilla Extract (organic preferrably)

1/4 cup Coconut Oil (organic, unrefined, cold pressed, melted)

1 tbsp Coconut Oil (this is in addition to the 1/4 cup)

1/4 cup Unsweetened Coconut Flakes (optional, to roll the bites in)

Directions

  1. Add all of the dry ingredients into a bowl and fold together.

  2. Add all of the wet ingredients (except the coconut oil) to a separate small bowl and mix.

  3. Slowly add the wet ingredients to the dry ingredients until they are mixed well.

  4. Slowly add the melted coconut oil and mix until it is well blended.

  5. Take out a spoonful at a time and roll them in the palms of your hand into a bite sized ball. Place on a flat dish, they can touch but best not to stack on top of each other.

  6. Leave them plain or roll them in unsweetened coconut flakes.

  7. Put them in the refrigerator to firm up for about 30 minutes or put them in the freezer (this works just fine and they are out of sight:) which is a good thing because they are SO GOOD!

  8. Keep them stored in the fridge until ready to serve. They get mushy quick.

  9. Enjoy! These are delicious! Serving size is 2 energy balls. This recipe makes about 19-20 balls. I use a Tbsp to scoop out the dough and form into a ball.
