Metabolic Sandwich Bread (from Bella Yon)

Ingredients

5 Eggs

6 tbsps Egg Whites (or 3 large egg whites)

2 tbsps Extra Virgin Olive Oil (avocado or coconut oil work as well)

1/2 cup Dairy Free Yogurt (unsweetened)

2 cups Almond Flour

2 tsps Baking Powder

1/2 tsp Xanthan Gum

1/2 tsp Sea Salt

Directions

  1. Preheat your oven to 350F and line a loaf pan with parchment paper and set aside.

  2. Make sure all ingredients are at room temp and in a large bowl, add eggs, egg whites, olive oil, and dairy-free yogurt. Whisk to combine.

  3. Slowly add all of the remaining ingredients and mix to form a smooth batter. Pour the batter into the lined loaf pan and smooth over the top with a spatula.

  4. Bake for 45 minutes or until the top of the loaf is crusty.

  5. Let cool completely before slicing into 12 slices and serving.
