No Bake Cookie Dough Bars

Ingredients

3/4 cup Almond Butter

1/4 cup Pure Maple Syrup

1 tbsp Monkfruit Sweetener

1/2 tsp Vanilla Extract

1 cup Almond Flour

1 serving Collagen Protein Powder (optional)

1/8 tsp Sea Salt

1/4 cup Organic Dark Chocolate Chips

1 tbsp Organic Coconut Oil (for topping)

2 tbsps Almond Butter (for topping)

1/4 cup Organic Dark Chocolate Chips (for topping)

Directions

  1. Line a loaf pan with parchment paper.

  2. Combine almond butter, maple syrup, and vanilla in a medium bowl. Add the almond flour, monkfruit sweetener, and salt until combined. Fold in 1/4 cup chocolate chips.

  3. Press the dough down in the loaf pan and put in the freezer for 10 minutes. Don't be afraid to use your hands. Pack it down.

  4. In the meantime, melt the coconut oil, 2 T almond butter, and 1/4-1/2 cup chocolate chips in a sauce pan. Be careful not to turn the heat too high.

  5. Once the bars have chilled for 10 minutes, take them out of the freezer and add the topping (I like to sprinkle a little coarse sea salt). Put the pan back in the freezer for 10 minutes or until the topping sets. Cut into 8 squares or 12 smaller squares. Store covered in the fridge or freezer.

Notes

Subs for Almond Butter. Any nut butter works

Subs for Almond Flour. Oat Flour can work 1:1 ratio

Subs for Monkfruit Sweetener. Coconut Sugar can work
